Methods:
1. Preheat an outdoor grill to medium or high heat.
2. Use a large bowl and add in at least two spoonfuls of the oil, juice from at least one of the lemons, minced garlic, minced shallots, ground cumin, dash of cayenne pepper, a dash of salt and half of the fresh cilantro. Stir thoroughly to combine.
3. Add the salmon fillets into this mixture and toss to coat. Let marinate for 15 minutes.
4. During this time add the hearts of palm and halved tomatoes. Drizzle in at least two spoonfuls of the olive oil, the remaining lemon and the remaining fresh cilantro. Season the mixture with a dash of salt and black pepper. Stir thoroughly to combine.
5. Brush the preheated grill with a generous amount of vegetable oil. Add the salmon onto the grill with the round side facing down.
6. Grill for at least 4 minutes or until marked on the bottom. Flip and continue to grill for another 2 to 3 minutes or until completely cooked through.
7. Remove and place onto large serving plates. Serve the fillets with the salad and a drizzling of the freshly made juice over the top.
